homemade thin-mint cookies


you guys.  I completely missed the girl scout cookie sales this year, which makes me want to crawl in a hole and hybernate until next year's sales. 

I didn't mention this before, because I am still traumatized by the experience, but I did try to recreate the samoa cookies.  it was THE.LITERAL.WORST.  I decided to make them with my old people (bad idea) and it ended up taking the entire day (bad idea) and I burnt my fingers on caramel (bad idea) and they tasted nothing like the real thing.  Whenever I see someone pinning the "make your own samoas!" recipe on pinterest, it takes everything within me to refrain from leaving the comment: "LIES! DON'T DO IT!"

So the other day I came across this recipe, and while I was a little skeptical, I gave it a try last night with a girlfriend.  It was easy, only took three ingredients, and requires no baking.  The cookies don't taste exactly like the real deal thin-mints, because we all know those girl scouts are slipping drugs into their cookies, but they did turn out delicious, and in some ways I like them better. I just said that.

Ingredients:
16-20 oreo cookies
7-10 oz. semisweet or bittersweet chocolate
1 tsp mint extract

Directions:
1. Twist the oreos to separate them and scrape off the cream filling
2. Melt the chocolate, then stir in the mint extract well.
3. Dip an oreo half in the melted chocolate, turn to coat using a fork.
4. Use the fork to remove the oreo from the chocolate, tap it on the edge of the bowl a few times (to let excess chocolate drip off) and transfer to a lined cookie sheet.
5. Leave at room temperature until set.

this might be the best thing you've ever posted. I literally laughed out loud picturing you will all of your little oldies, covered in baking supplies, and burning fingers.....hahahahaha, you definitely cried in my vision, as well. But its also the cutest thing ever too. I love you so much for loving your little oldies. Its one of my favorite things about you.

Somehow I MISSED GIRLSCOUT COOKIES TOO!!! I'm so sad, but this just made me hopeful. Haha. I'm going to have to give these a go!
