The other day at work, the lady sitting next to me at lunch said she couldn't finish her fries, and offered them to me, and then I actually believed in world peace. I don't know how you feel about sharing food, but I have zero qualms. In fact, sometimes the food even tastes better because is wasn't going to be mine, but then the stars aligned. And ever since that day, I have been on a fries kick. So this is my attempt to satisfy that same craving with something a bit healthier.
Sweet Potato Fries
1-2 sweet potatoes
other seasoning (optional)
Preheat oven to 450. Peel and cut sweet potatoes, about 1/2 inch thick. Cover with a thin layer of olive oil and sprinkle with salt and pepper, tossing them around. Spread them on a baking sheet and put in the oven for 15 minutes. Remove, turn each piece over, and put in the oven for another 10 minutes. Let cool and enjoy!
